Before starting these hearty, healthy waffles...
Een bloemkool pizzabodem is geen Italiaanse pizza maar wel een pizza versiering op een bloemkooltaart. Niets mis mee, is zeer lekker en gemakkelijker verteerbaar. En nu, laten we even de realiteit onder ogen zien: Wat betreft deze stevige gezonde wafels. Oeps, ik heb hét woord gebruikt ‘gezonde’ wafels. Nu komt het zeker niet goed??? Of misschien wel. Vertrouw mij voor één keer, aub. Verwacht met deze ingrediënten geen Brusselse wafel of een wafel met knapperige suikerklontjes. Ik begrijp dat wij in België wonen, maar vertrouw me, deze wafels zijn evenzeer verrukkelijk.
For these hearty, healthy or better yet nutritious waffles without gluten, lactose or unnecessary additives like sugar, you only need four ingredients and you make four waffles with them.
You need 150 g cashew nut paste, 125 g coconut cream with minimum 14% fat, 1 organic egg and a pinch of baking powder. Mix all the ingredients in a bowl, preferably with a hand blender, as the nut paste is very sticky. Mixing enough with the hand blender will create a nice smooth batter that you might think will stick to the waffle iron and definitely not come out a waffle, but trust me that is not the case.
This recipe is super easy, with only four neat ingredients, and the waffles don't stick to the waffle iron. Promise! You can easily remove them from the iron. A side benefit is that you won't eat ten of them to be satiated - two waffles will probably be enough. At least in my case, but I remain a specialke.

Ingredients for 4 waffles:
- 150 g cashew nut paste from MONKI with no added sugar
- 125 g coconut cream (14% fat) organic variety from COCOMI
- 1 organic egg, preferably an organic variety
- A pinch of baking powder, preferably gluten-free
Supplies:
- Stick blender, preferably of solid power
- Mixing bowl, which you already have in your home
- Waffle iron, no worries, any machine can handle these waffles
Preparation:
- Put all the ingredients in a mixing bowl, the order does not matter here, we are not with pattisserie bezig
- Blend preferably with a powerful hand blender until a smooth dough forms.
- Preheat the waffle iron and lightly grease it if necessary. With mine, this is not necessary. I only had to do it the very first time on commissioning and now she is always good and ready to bake.
- Pour the batter onto the waffle iron and bake the waffles.
- Carefully remove the baked waffles from the waffle iron and eat them without burning the corners of your mouth.
- Serve the waffles with your favorite toppings, such as fresh fruit or delectable fermented white cabbage with pineapple
