This salad not only brings flavor to the table, but also warm memories of our youth.
The Polish sauerkraut salad we know from those days when we pounded coal with our little feet in wooden barrel
Ingredients for 4 people to serve as a side dish with a meal:
- 500 gr Sauerkraut, preferably non-pasteurized variety with live cultures of bacteria
- 2 Carrots
- 1 Apple
- 1 Onion
- 1 clove of garlic
- Salt and pepper
- Yellow olive oil
- Leaf parsley
Preparation:
- If desired, rinse the sauerkraut under cold water to reduce acidity,
- Cut the sauerkraut into finer pieces if desired,
- Add grated carrot and apple to the sliced sauerkraut,
- Season with herbs and a dash of oil,
- Sprinkle the salad liberally with chopped flat leaf parsley,
- Let the salad rest in the refrigerator for at least two hours before serving.
TIP:
This salad becomes even more special when you combine it with oily fish such as mackerel, sardines or tuna. Enjoy this simple and flavorful dish that takes us back to those carefree days of pounding coal with our little feet in the wooden barrel.
